I was a little nervous about the fermented pepper kick, but the natural fermentation gives it this deep, funky warmth that the sweet cayenne balances out perfectly. It’s become my go-to for eggs and tacos, and the sherry vinegar keeps it bright instead of heavy.
That sherry vinegar really cuts through the heat in a way I wasn't expecting, and the fermented pequin peppers give it a funky depth that's perfect on tacos. I've been reaching for it on nearly everything since the bottle arrived, but it's not so intense that it overpowers a dish.
Poured it over eggs and even straight on a spoon just to taste it—the fermentation gives it this funky depth that hits right behind the sweet pepper heat. Lasted me three weeks of daily use, which is solid for a bottle this size.
